Fritata Bites

Ok...so this is what I"m making. Right now the count is at about 40 people.

Mini crab cakes
Chicken salad mini crossiants (I know it isn't imaginative, but old people are set in their ways)
Some sandwich roll ups for the kiddos
Filo cups filled with a goat cheese mousse type thing--goat cheese, cream cheese, piccadillo peppers chopped, crispy proscuitto. Piped in then topped with a tiny fan of apple
Stuffed mushrooms
Cheese tray with a mix of olives and three types of grapes
Spinach dip (again....mom)
Veggies with a dip and hummus
Chocolate dipped strawberries
Puff pastry cookies filled with orange (real) buttercream and some with ganache
cheese straws and a combo of crackers
mini ham and havarti "quiches" in a pastry cup (cream cheese, butter, flour)
broccoli "quiches" in the same pastry cups
Mix of cookies

I bought some fig jam.......what to do...what to do...
Does this sound ok or do I need to add/change anything????

Looks wonderful!

If you wanted to put a bit of a spin on your hummus, add a chipotle, for a nice smoky flavor. You can get them in small cans (4 oz?) packed in adobo.

Excellent idea!
If you are not used to working with them, add them very finely diced in very small amounts- it gets hot fast. You could do both regular humus and chipotle side by-side and put a small red pepper on top of the chipotle one to indicate heat ( for the seniors stuck in their ways :wink: )

Spread the fig jam on top of a small wheel of brie, heat it in the oven gently until warm and gooey. Serve whole with small cheese knives and a sliced baguette from Blue Dog Bakery.

Pato Confitado- Catalan flat bread style pizza with duck confit, goat cheese, fig marmalade and herb salad

I get this at Mojito all the time and love it. You already have the goat cheese, marmalade, and probably some herbs; pick up some bread and duck and you have an awesome dish. I use lightly dressed arugula to help balance the sweetness of the figs when I make it.

Yum! I have a jam of fig jam from San Fran sitting on my counter just waiting for a use. Any suggestions on where to find the duck confit ( or just duck parts) locally?

I get cooked duck (not confit) at Kroger (Hubbards). It is in the frozen section to the right of the fresh seafood display.

Justin...that's exactly why I bought it. I feel in love with the flatbread pizza at Mojitos.
I can get duck at Kroger????? omg...I'll have to go look tomorrow.

Now...what about the flatbread?

I love the idea of the brie too. Yummmmm

I either use Lotsa Pasta pizza dough and parbake it or buy the pre-made Naan at Kroger.

If you can't find duck at Kroger, try these places. I bought some about a month ago at the Hubbards location.
