Pork debris as a trend?

by Nathaniel C » Sat Nov 18, 2023 12:59 am

I've had it at a place or two and have seen it on the menu at many others. No complaints about the taste, but the presentation is always lacking. It's like somone couldn't decide whether to shred or chop the pork.

Sounds a lot like the variations of pulled pork barbecue, Nathaniel! I haven't noticed this trend, but maybe I've been in different places. Where are you seeing day-bree?

I've seen it on the menu at a few places--when I've had it, it's like the pork is roughly shredded then the strands are chopped into 1/2" pieces.
