Tavern on the Green went bankrupt 4 or 5 months ago, IIRC.
Guess they weren't all that profitable. :?

Don't know what lead to the bankrupcy, but they were #2 on the list (27 million in sales) posted on msn. Maybe the owners were pissing away the profits.

I've been wanting to try Gibson's for some time, but there are SOOO many other places to try in Chicago that it keeps getting shoved to the back of the list.
I was going to try to make it there last year during the NRA Show and wound up at David Burke's Primehouse instead. That was some tasty eats! Maybe I'll try again this year.

They're not the "most profitable" restaurants; rather, they're the restaurants (in the case of chains, the largest location of the chain) that bring in the most money in a year.

Unfortunately, as Tavern knew well, large checks don't always translate to large profits.

(I know Joe's Crab & Smith & Wollensky are chains; Joe's branches are franchises, while Smith are company owned . . .)

I think the title was misleading. It said profitable, but only mentions sales.

The Smith & Wollensky mentioned is the NYC location only Joe's is the Miami location.

I would think if we were talking profits we'd see an all together sort of different restaurants listed.

I watched an episode of 'Into the Fire,' in which Joe's was featured. It is a truly massive operation...

Makes one wonder about the rate of employee burnout. When I worked at Planet Holywood, Orl, they dropped like flies. It's just tough to keep that intensity up, day in and out.
