Wiltshire on Market

Just curious if anyone has tried it? I had a remarkable meal there a last week and can't wait to go back! :D :D :D

A good friend went there right after it opened and said it was very good and stood to get better with a little time to shake the kinks out. I'm looking forward to giving it a try.

While I appreciate your enthusiasm, Colin, and believe it's warranted, just a quick and friendly note to you as a relative newcomer to LouisvilleHotBytes: If we speak well of a restaurant or food business in which we have a personal, business or family connection, it's much more appropriate - and more effective - to disclose that connection. By the way, the same goes for suppliers who post glowing reports of eateries to which they sell product, without mentioning that. Transparency and disclosure are good things for the forum. :)

No harm, no foul, though. We're glad you're here!

Coby and I worked together some time ago at Deitrich's, and I can say that I expect her food is nothing short of spectacular. Have not been yet but will be going soon.

We went a couple months ago and it was fantastic. I mostly don't eat meat, but the crispy pork belly... oh my god. I can't wait to go back.

Full disclosure: We're friends with Coby and PJ. In fact, we dined with them when we went. But I that didn't influence my opinion. It's objectively delicious!

However, My wife and I ate there last week and absolutely loved it.
From what I understand, the menu changes weekly.
We started out with the charcuterie and cheese tray. Lots of variety and "little tastes". I then had a Gazpacho with chopped-up smoked shrimp in it (perfect hot weather food), my wife had a Romaine salad with a fancy cheese crisp (the only salady thing on the menu, and she always hasa salad). For the main course, I had the pork belly. Imagine a cross between little slabs of pork roast and bacon. Smoky, luscious, rich and served over perfectly cooked, kale and a corn cake. The varied flavors and textures were simply amazing.
My wife had the pasta which had little homemade raviolis with Asian influenced spicy tomato sauce and baby squash. She insisted I eat one of the squash blossoms and I was blown away when I discovered that it was filled with chevre. Again, the textures and flavors were remarkable and there's an intensity of flavors that can only come from fresh ingredients.
The setting is intimate and leisurely, with just 8 tables and a bar (no hard liquor).
Servings were smallish, but so were the prices and with a $28 bottle of Malbec and no dessert, we were still under $100 including tip.

We know the owner, Susan Hershberg; Wiltshire Pantry catered our son's wedding years ago.
We know Colin; he used to share a house with my daughter & son-in-law.
We know Terri, the manager; she worked with my daughter 14 years ago at Lynnes (when it was still fun & funky).
We know Sam, one of the servers who also works at Old Towne Liquor (where I spend too much money).
Fred, one of my best friends and neighbors, supplies them with produce from his local farm.
And I recognized LettyQ behind the bar; she's formerly from The Rover (hi Michael), El Mundo, and Red Line (hi, Andy). She's the sister of a long-time business friend.
Having said all that, the food at Wiltshire on Market is fabulous, despite my knowing so many of the people there. It's nearly impossible to be a foodie in this town and not know or be associated with people in the biz. I call it Louivlle's two degrees of separation.

Looks like I'm going to have to trump the board and give them my glowing review. Love this little place. Honestly - probably one of my favorite places in town. And quite frankly - if Cody (affiliated with ownership or not) doesnt step up and get people thinking about this little place on Market -who will? I havent seen much about them in the press - and they certainly deserve it. It would probably be nice to read a review that states that the reviewer followed the place through inception to plateau. (meaning multiple experiences.) Tired of reading formal reviews that are based on one visit.
So given the rules, I cant say that I think BASA is the best restaurant in town because I'm affiliated with ownership?! But I think it is. Why not tell people what i think. I mean, seriously, this is a forumn. We arent adding chapters to the bible. Maybe if the regs were less rigid - more industry pros would contribute - and this forumn might just be a little more exciting and informative.

Who cares if you know, are related, married, dating, petting, etc. anyone who manages / owns your favorite dining experience. You should be able to talk, express, plug or in any other way promote what ever you feal passionate about here. Just talk about it - stimulate interrest - get people out looking for themselves - and stop relying on the media have so much influence on your experiences.

Cody - cant wait to hear about your follow up experience. Better yet - what time you going there - I'll meet you.

Un-wad your knicks, Jayson. ANYBODY can post a review. However, it's a good practice to mention it if you're connected to management/ownership/chef through kinship, marriage, BBF, whatever. Nobody said Colin couldn't prop up Wiltshire on Market. I simply gently reminded him - and through him, everyone - that disclosing any connection qualifies one's review and makes it more meaningful. And giving the APPEARANCE of concealing such a connection makes some people suspicious.

C'mon now ... have a little drink. Take a few deep breaths. It's okay ...

(Oh, as for one-visit reviews: Yeah, I sometimes do that. If a consumer has a bad experience, he's not going to give a restaurant another chance. Why should a critic be more lenient? Tell it as it is and move on.)

It's my spot. You can't have it. Went last night and sat at the bar w/ a good friend and ate a fabulous watercress salad w/ house made duck prosciutto and locally sourced Athena cantaloupe. We had perfectly temped cheeses, and charcuterie, and and and......LAMB BOLOGNESE W/ HOMEMADE TAGLIETELLE dude, don't go. Just go hit the Hall's steam tables and forget how fantastic my braised pork shoulder over summer veg and cauliflower puree might have been.
I tried to forbid the owner to even put a sign on the window, but she shot me down for some reason. Colby was torching miniature s'mores cupcakes and tossing daisies around 'n stuff. You don't wanna be exposed to her tomfoolery!

I am a vendor of most every restaurant ever discussed on this forum and with that disclosed I have to say Jayson you are wrong, Basa is not the best restaurant in town it is 732 Social, IMO.
Not to say that Basa isn't excellent, it is. I love the more casual atomosphere of 732 Social, but that's me.
For those that have not tried Wiltshire on Market, you are missing a true gem and the food is amazing!
