New executive chef at Z's Fusion

by Robin Garr » Mon Oct 18, 2010 7:07 pm

Press release. The parts in red are kind of cheeky, don't you think, kind of like It's All Greek To Me's claim to have the best gyros in the entire world?

Z’s FUSION ANNOUNCES NEW EXECUTIVE CHEF

Z’s Fusion announced that David Scales has been named Executive Chef at its downtown Louisville location. Scales has been an Executive Chef for nine years at locations in Washington, D.C., Virginia, and Maryland. He has won several culinary awards throughout his career, and graduated from the prestigious L’academie de Cuisine, where he was also a Guest Chef Instructor.

Mehrzad Sharbaiani, founder of Z’s Fusion, commented on Scale’s expertise: “At Z’s Fusion, we want to elevate the quality of life for our guests with the most unique dining experience in Louisville. David’s ability is unsurpassed at blending a unique European style with the local Louisville flavor. Our guests are really going to enjoy the cutting edge creations that he has planned.

Scale’s unique style blends French techniques with modern cuisine and local Kentucky ingredients, which defines the unique taste of Z’s Fusion. Scales touted the fresh seafood that is flown in daily to Louisville. “Mehrzad is very professional, and gives the culinary staff at the restaurant the freshest ingredients and the freedom to express ourselves through the cuisine we are able to offer to our guests. We have a Rock Star type of line crew, and they will help us achieve our goal of being a nationally recognized restaurant”.

Scales will oversee a staff of 15.

Anyone been since the new chef has taken the reigns?

We've always enjoyed Z's and Z's Fusion and need dinner before the Manheim Steamroller show Monday night. Menu looks good, but looking for a little confirmation that they are clicking on all cylinders if anyone can help.

Thanks-Doug

I went for lunch sometime in, oh, late November. It was very good, though I can't believe some of the menu items they removed (i.e., my favorites) - for example, no more potstickers and no more crawfish roll.

We went for dinner last Friday and I found the entire menu an improvement, from my stand point. Before I only enjoyed the appetizers and couldn't quite find an entree that I really liked. This time I thought my husband and I were going to box over each others dinner. I enjoyed every course. I will definitely put Z's Fusion back into my dining rotation.

about 3 weeks ago i dined there with several other guests.
it was not a positive experience. the management informed us that they were in between chefs and a new one was coming on board.
hopefully this will set for a better dining experience.

I find it funny that they told you they were in between chef's,he started back in early August. Regardless he seems like a nice guy so I wish him the best of luck.

The "elevate the quality of life" part was a bit precious but the rest just sounds like typical marketing rah-rah.

I would rather have an example of a "cutting edge" creation. Maybe a recipe that looks tasty but is just complicated enough/requires ingredients I don't keep on hand so that it makes me think I would rather go there and have them make it than make it myself at home.

I certainly hope it's improved. My last experience was kind of meh.
