Free Range Meat/Chicken

by HilaryHarris » Fri Jun 25, 2010 7:30 am

I have recently grown more conscious about my eating and was wondering what restaurants (with the exception of Lilly's, Jack Fry's, etc.) have locally grown, free range meats in their restaurants. I went out to eat last night with my boyfriend at Mark's Feed Store for a fundraiser and could not find anything on their website. I have a hunch they do not buy their meat locally.

Is there a place that lists Kentucky Proud restaurants? Are the Louisville Originals Restaurants Kentucky Proud?

First, welcome.

Go to http://www.kyproud.com/, scroll to the bottom, click "Company Search," then select "Louisville" from the drop-down box, then search.

I don't think the list is exhaustive, and there are both restaurants and suppliers, but you'll see some restaurants listed (I quickly saw Equus and Ditto's).

There is a price point that most consumers will not go over in a fast casual setting like Mark's. If they were using local meat for some menu items, they cost much more than the usual mass produced meat. I'm not saying some people wouldn't order things like that. But from a inventory standpoint, is it worth it to stock those items at a much smaller profit margin, when that's really not the market you cater too?
That's why you see the most locally sourced in higher end restaurants where they can get a phrase farmers like to use, a fair price for the product.

Hey, Hilary! Don't I know you? Welcome to the forum! :)

One lower-budget place you might consider is Stan's Fish Sandwich. No guarantees on the fish, but Stan and Leila Gentle also own Dreamcatcher Farm, a locavore, humane beef, lamb and pork producer. They have, or used to have, a Dreamcatcher burger on the menu at Stan's. (And you can also buy their frozen products there at retail, and they're generally at both the Bardstown Road and St. Matthews farmers' markets on Saturdays.)

Hi all-

Yes, Robin, you do know me :)

Thank you for your information! I figured with the price points at Marks' that their meats were not local...thank you for the recommendations!

Adam Barr also does some fine beef and chicken. I joined his meat CSA about 6 months ago and haven't looked back.

Testify! We've been in Adam's meat CSA for about as long as you have, Justin, and very happy, particularly since we can order meat in the quantity and selection we want rather than being surprised by a random monthly box.

I think Hilary was looking for restaurant info, but it doesn't hurt to toss these options out there.

Barr is the way to go. He lets you order as much/little and you want and it is only for a 3 month span. Most of the time the meat is frozen so spoilage is not and issue. If after 3 months you haven't used up your supply, you can scale back your next order.

Is this just for meat? I went to the website, and couldn't find a great deal of information, and it looked like the vegetable part was $250 for 12 weeks, or $450 24 weeks, but no option to order what you want.

Send Adam an email and he'll send you the info. He has it set up in an Excel spreadsheet.
