Haven't heard anything but I'm guessing they will be pushing her to be open by the holiday season. Although I'm not sure why everybody is so enthused about it opening, we have many other restaurants in Louisville as good or better and many of them are locally owned. I've been to a couple of them and was never thrilled.

Here's the menu for the one in Indianapolis for reference: https://www.thecapitalgrille.com/menu/dinner/appetizers

They actually show the Louisville one on their website but don't have a menu or opening date up for it yet.

I had problems getting the above link to work - it went to a blank page on the Capitol Grill website so I can’t say I’m impressed with their IT skills but that’s not why anyone goes to a restaurant anyway huh? Ok. So I googled The Capitol Grill and clicked on the Louisville location. It came up with a note “Permanently Closed” . That doesn’t bode well. Finally found their menu elsewhere and it was kinda underwhelming. My feeling is if everything on your menu can be well prepared by a cook with just basic culinary skills how interesting can it be? I think maybe I’ll pass.

I found their Indy menu (it initially kept bouncing me back to Louisville due to my location, but they don't have a menu yet) and I thought it had some interesting items, though it isn't the kind of place that I frequent. Some apps look good, but steakhouse entrees are what they are, typically.

Regarding the basic aspect of the menu, I literally read this article right before I read this thread. https://www.grubstreet.com/2022/09/why-have-restaurant-menus-gotten-so-simple.html#_ga=2.6450802.1543741645.1663013139-1901473589.1662583893

I'm not sure if there is a paywall, but the gist is that both supply (potatoes, higher prices for seafood) and staffing issues have led places to simplify their menus and, regarding staffing, remove menu items that are labor-intensive. A similar NY "chophouse" was featured that intended to open with 16-20 kitchen employees, but only has ten (when no one is sick). I don't know if it applies to CG's menu, but interesting either way.
