I'm not sure we're ready for this!

by Mark R. » Thu Sep 08, 2022 1:49 pm

Business 1st just announced that Gordon Ramsay is going to open a steakhouse at Caesars in southern Indiana later this year! I'm sure everybody will flock to go to a restaurant that he owns! I wonder if he will do a health kitchen show selecting the head chef for this restaurant?

I think we had 2 Jewish delis in Louisville when I was a kid. One of them was on Hikes lane or Taylorsville Road, kind of close to Bashford Manner mall. The other was in that shopping mall where Del Frisco's is now. Not sure why no one has tried to open one since then.

I agree I would trade a steakhouse or even 2 of them for good Jewish deli or a good fish restaurant that's not all fried fish! You would think with the UPS hub being here we would have fish all over the place!

Casinos and steak houses are not my cup of tea. If Ramsay can open something with class across the river that may bode well with some tourists and local patrons, then I have no problem with that.

I see it as a win-win because it won't necessarily affect our culinary ecosystem in most of the metro area, yet jobs and money spent at Caesars is money that will be recirculated around town. Besides, I find it interesting that he selected Louisville/S. Indiana for this high end concept.

I putting pieces of information together here, so don't take it as fact. I believe Ian Hall(The Exchange) is opening a "non fried" seafood concept in the old Gospel Bird with Mark Ford as the chef.

Hints that it will be like https://www.theoptimistrestaurant.com/nashville

We do.

Such as? The only 2 I'm aware of that are decent are Catch 23 and Mitchell's. River House claims it's a seafood restaurant but only have a very limited number of fish dishes on the menu and have more beef than they do seafood. Of course we have several other chain restaurants that serve fish such as Bonefish and Red Lobster but again they are not truth seafood restaurants. Other than that small group everything is basically fried that I'm aware of except for places that have shrimp and salmon (which neither my wife nor I particularly like) etc.

I certainly agree and we love it but it's something completely different than true seafood.

One thing very different in Louisville v other cities (even Chicago, where I am now) is that virtually every restaurant in Louisville offers at least one "fish of the day" that is not fried, and that rotates depending on what is fresh (i.e.: not the same fish every day). Also, every good Asian restaurant offers several fresh fish dishes (Jasmine, August Moon, Simply Thai, most Indian places), and many of our sushi places have wonderful grilled fish dishes (Hiko-a-Mon started as a Kyoto-style seafood place, and added sushi only after most customers demanded it - their fish dishes are outstanding). Bonefish Grill is a chain, but has a good selection of seafood with different preparations. Even our typical fried fish places (Linnings, Cunningham's) offer a choice of grilled, baked, or broiled fish options.

I agree that another fish-centric place would be nice, but we eat out a lot and never have had a problem finding a plain grilled, baked, or broiled fish dinner at any local modestly upscale restaurant!

As far as Jewish deli's, those are extremely tough to do today. The big problem is service! Since deli's do much of their business for breakfast and/or lunch, servers do not get large tips (as there is little if any accompanying liquor service) and take other jobs. Also, with Covid shortages corned beef, pastrami, and the ilk have become extremely expensive due to the labor involved in prep and cooking. People are resisting paying the price, and traditional deli's are closing across the country!

Their regular menu includes crab, shrimp, tuna, salmon, halibut, calamari, oysters and mahi-mahi. For specials, they often have Moqueca and sea bass. What do you mean by “true seafood”?
