"sushi grade" question

by Jon K » Tue Feb 20, 2018 12:26 pm

Am planning to make tuna crudo/poke/tartare and wonder where I can find "sushi grade" tuna. I checked and the USDA doesn't really cover this. I asked at Whole Foods and they said theirs is not "sushi grade" but many people make sushi and sashimi with it. So, the question is: Where do folks go in Louisville to buy the highest quality tuna to be eaten raw?

Also, Hiko-a-Mon used to have a fish store, and I believe they still will sell you the fish from the restaurant
