Anybody have a favorite brand or favorite way to use this?

I know it's not the same, but I do a lot of Indian cooking, and I'm lazy. I just use butter when ghee is called for.

Yeah I’ve been doing that too but I found that the ghee is shelf stable for months at a time and I sometimes run out of butter. Also the ghee cooks at a much higher temp without smoking or burning than butter does. I can really hot sear with a bit of butter flavor with it.

Trader Joe's has a Buffalo Ghee that's quite nice. I made a pretty bang on chana masala with it just this week.

Michael! Now you started something. I wasn’t familiar with Chana masala so I did a bit a research on it. Perfect! Just the kind of recipe I was looking for! I found a recipe on you tube to get me started (as well as a nifty chef to follow - Vah Chef. I dislike many of the ‘how to’ videos because the hosts seem more interested in hearing themselves talk. This guy was very good and easy for me to follow.)
I’m going to try the recipe with my new cows ghee and see what I come up with. Thank you so much for your suggestion!
