Been 4 times, never been a steak on the menu.

They absolutely do have steak on the menu. the menu changes daily, so it may not be there every day, but they do have steak. I actually had one last night, and it was delicious.

Are you selling them that steak Will?
When I was the chef at Z's Downtown as far as we knew we were the only restaurant dry aging our own steaks. Specifically we did a 28-day age on bone-in ribeye as well as a 14-day age on bone-in Duroc pork chops. We had converted an old walk-in cooler in the Kuntz's catering kitchen and aged meat for both locations. Since the downtown location closed after the end of my tenure there I cannot speak as to if they are still doing this or not.
