This would be the famous New Orleans Brennan family of Commander's Palace (see Emeril Lagasse, Paul Prudhomme), Brennan's ("Breakfast at Brennan's" - recently reopened), Mr. B's Bistro, Tableau, etc. I read that the family has 13 restaurants in New Orleans. I will look for the documentary.
That's the family. Very interesting how they got started and learned the profession on the fly. Also shows how it's not just about great recipes or culinary skills but how you interact with your patrons, staff and public in general. I watched the whole thing and didn't pick up my iPad once.
