Saltpeter?

by RonnieD » Tue Dec 13, 2016 8:11 pm

I'm venturing into the world of corned beef, and the recipe I like best calls for saltpeter. But I can't seem to make heads or tails of where to find this. The only thing I can find is to order it online from a chemical supplier (it says it's food grade). Anybody gone down this road before?

The link below includes a geeky exhange (chemistry!) on corned beef brining and curing. There is discussion of, and a link to, a Ruhlman blog post on corned beef that includes a link to purchase "pink salt" on-line for $ 2.50. Also, some suggestions that you can order through pharmacies, as well as multiple cautions on using it. I have never done this, but wish you good luck!

Pink salt can be sourced locally at Cabela's or Big Bass usually and it's easy to use. Online it's readily available from Butcherpacker.com. We cure our own bacon and use it all the time.

Thank you both! Cabela's is the easy get, so I'll look there first!

Could go all artisanal and scrape some up off a cave floor .. https://en.wikipedia.org/wiki/Great_Saltpetre_Cave
Probably easier to go to Cabela's or Bass Pro
