Cumin seeds

I love cumin but have always used ground cumin. (I like to use a great deal of it in chili.) The other day I opted to use cumin seeds insteads. Whoa! It was almost a totally different animal! Floral notes like crazy and not near as "earthy"as the ground cumin. Anybody else notice this or did I have a stroke and not realize it?

Note that huge quantities can be had for cheap at the various Mexican groceries!

I only use cumin seeds.... I think the powder loses flavor extremely quickly.

Best thing to do (especially for chili) is roast them in a pan with other seasonings (whole dried pepper cut into pieces, any other spice you like to use) and then grind it down into a powder.

So very good.

You can also put it in the oil that you are heating, and infuse the oil, and pull the seeds.

Penzey's sells a huge bag pretty cheap as well...
