A plethora of Jalapeños

What to do, what to do?? I have jalapeños in my garden and just got them in my CSA for the second week in a row. Besides pickling ( we don't really eat them) or Jalapeño poppers ( already have a great recipe) , what's a good use for a lot of green jalapeños?

Hmm, they do have kind of a limited use. :)

Maybe get a bunch of tomatillos and make up a batch of salsa verde, then freeze it in single-serving batches?

Tomatillo salsa. I make it in HUGE batches then measure one cup servings in a small Baggie and freeze. I also freeze in plastic containers and pull out as needed for meals.

I'm sure you already know but still worth mentioning....don't finish off with fresh cilantro if you are freezing it.

Okay- I'm confused. Love tomatillo salsa- I canned for the first time some this weekend. But my recipe only had one jalapeno to 3 lbs tomatillos. I'd have to make a WHOLE lot of salsa to use up the 15-20 jalapenos I have right now.... :?:

Oh, nemmine, then. I've never made that kind of salsa, I was just ASSuming that it would use up a lot. I'm out of ideas, but I'll sleep on it. :)

Whoa...whoa...whoa ..... I'm sorry if this comes out as the I'm-Latina-so-I-can-eat-fire schtick..... But, ONE jalapeño ?! Was it spicy enough for you? When I make salsa verde i use 20-30 jalapeños as well as 7-10 serranos for about 30 tomatillos. This is along with onion, cilantro, small amount of garlic.

I'm in the same boat with the jalapenos. Coming off like crazy. Any ideas welcomed. I'm thinking at the least I'll do some jars with vinegar and give them away.

Anxious to see if my ghost pepper plants produce. One would know that during the coolest summer in years I plant the peppers that need the longest/hottest days to actually produce.

Lol, Becky! This gringa used 5 roasted serranos and one jalapeño for the salsa( lots of cilantro and lime) My tomatillo salsa verde is not hot- just very flavorful.

20 Jalapenos ? I thought you said you had a "plethora". 20 jalapenos falls into that "I've got a few jalapenos" category. You've got to get up in that several dozen range before you can call it a "plethora". :? Personally, the last time I checked the garden, I'm up into the "metric sh**load" category. The Ghost Peppers, Carolina Reapers, Red Savina Habaneros and Trinidad Scorpions are just starting to ripen...a bit early this year.

As for your plethora, find a good salsa recipe and away you go.

Make a simple syrup with them and then use club soda (canned bubble water from kroger) to make your own jalapeno soda.

we first had this at Stella's in Lex and it was great, so great we made it at home a few times.

You could also clean & chop them for freezing to pull out when you want to make chili in the colder months. More laborious would be to roast them and can / preserve them.

There's also hot pepper jams & jellies...
