Heavy mayonnaise?

I hate mayonnaise. And salad dressing. Both of them.

So imagine my surprise when I got brave and tasted some chicken salad last week and fell in love. It was so good that I called the owner and asked for her recipe. She laughed, and gave it to me, and it really is simple, but she said she used heavy mayonnaise in it and that was what made it creamy. Personally I was convinced she made it with sour cream and that was why I liked it, but I was wrong!

Anyway, I saw the thread on Duke's Mayonnaise, and that seems well liked, but what should I use since I am not willing to buy a gallon of the commercial stuff? Duke's? Hellman's? Any suggestions?

I always liked Hellman's until I tried Duke's. Duke's is by far the best!

You might enjoy making your own mayonnaise. I had never tried it until I was making something that called for mayonnaise (can't remember what) and realized that I was out. Rather than run to the store, I made my own from a Donna Hay cookbook recipe. It's basically the recipe below. It takes about 5 minutes and can be made in a blender.

------------------------------------------------------

Mayonnaise with olive oil
(Adapted from Basic Mayonnaise from Donna Hay’s Modern Classics Book I)

1 egg
1 tablespoon lemon juice
2 teaspoons Dijon mustard
Sea salt and freshly cracked black pepper
1 cup extra virgin olive oil
- In a blender or food processor, process the egg, lemon juice, mustard, salt and pepper until well combined.
- While the motor is running, pour the oil in a slow, thin, steady stream and process until the mixture is thick and creamy.

It appears that "heavy mayonnaise" is specially marketed to the food service industry and the primary difference seems to be additional egg yolk.

Commercial heavy mayonnaise is delicious, believe me, but you don't need it for your chicken salad. Duke's for the win!

I was at Reardon's a Market today and saw a jar if Duke's mayo. I asked the nice lady behind the register why it was so special. She didn't really give me an answer other than it was "so creamy". So, I bought a jar.
OMG!
It's so creamy! It is noticeably better than Hellman's. It was great on a tomato sandwich and made wonderful deviled eggs.

My family travels to the North Carolina coast every June and we bring back cases of Duke's. Yes cases! Makes the summer perfect and we hoard our stash as long as possible.

according to Dukes it could be available in Kentucky Kroger's and Walmarts but your mileage may vary

I tend to read the ingredient labels these days and prefer anything that is closest to a home recipe.

Those making it at home need to head the warnings about raw eggs etc.

I love "Just Mayo." It's a relatively new brand with only a few ingredients. Most grocery stores have started carrying it.

Find an asian market and grab a bottle of Kewpie mayo. Nothing better IMO including Dukes.
