Bakery equipment?

I lurk craigslist everyday looking for stuff and I have ran into a wall searching for bread racks. You know those plastic bread racks you see Klosterman, etc using to deliver bread? If anyone knows of anyone with them that want to get rid of them let me know. I am also looking for a bread proofer as well. PM me if you know of anything. Cheers!

I find bread racks to be indispensable for my catering operation. :D They are the perfect thing to deliver catering trays with. You can also fit two full size hotel pans on them as well! They lock stack and fit in the vans snuggly so things don't shift around too much in transport.

To be honest with you, the bread racks your talking about actually belong to whatever bakery is delivering to you. You kind of treat them like milk crates, pile them up until the next delivery when they take them away. Sometimes they just disappear. :wink:
That being said, there are usually big stacks of them outside of grocery store receiving docks or you can call Jason at Klosterman's on 7th St. Rd. to see if you can get some from them. 634-4435

Occasionally there will be a Cres-Cor holding cabinet or two at the JCPS surplus auction that you could use for proofing. I'm kind of thinking about getting one and turning it into a smoker. :D
Actually they usually have an assortment of small wares, Hobart mixers, Buffalo choppers, convection ovens, etc.
Although I would stay away from any of the refrigeration units as they are most likely shot if they are there. There are great buys to be had if you do a little research before you go, so you know what things retail for so you don't get into a crazy bidding war and wind up paying more than what the items worth. I've seen that happen a lot. :roll:
But on the other hand, I saw a double stack Vulcan convection gas oven go for 100 bucks one time. :shock:
Hobart mixers usually go pretty cheap too because no one wants to move them, but they may or may not have the attachments with them.
They usually hold the auction once every month or two depending on how much stuff they get.
If you are looking for anything in particular I can always walk next door and see if they are going to have it.
I can tell you they don't ever have refrigerated deli tables. Everyone is always looking for one of those it seems. :roll:

Thanks! Well, I want to use the deli trays for MY deliveries. It would make it so much easier as we are baking more and more bread. Especially for one of our clients it would be nice to have to racks, one for me and one to leave at their restaurant so I can just switch it out upon each delivery. I'll lurk around Kroger and ask them, I have called Klosterman, Earth Grain, even the old Wonder Bread outlets (that was a bizarre call in that they were SUPER mean on the phone).

I dream about the proofer you just wheel in a speed rack then pull it out and push it into a full sized convection oven.. ah one can dream.

I would love to check out the JCPS auctions. They hold these once per month? Is there a site that has any information on them?

At the bakery in JCPS Nutrition Service Center, we have 5 double rack capacity proofers and 12 ovens!
They sure are nice when I have large cookie orders. :D
There isn't a website to check out auction items. They just announce the date of the next one and I can take you next door sometime before to preview anything you might be interested in.
They are always on a Saturday Morning at 9:00 am
