Leaf lard for pie crust

Pi day approaches quickly, and I realized I have no idea where to get leaf lard in Louisville for pie crust. Or good local rendered lard. In my pie crust I use a mix of lard and butter and the hydrogenated stuff at the grocery store is no better than using shortening, in my opinion. Any ideas? haven't had a chance yet to go to all of the butchers from the other thread to check them out.

I don't know where to get natural lard.

How could lard be bad?

I would try Burger's Market. Phone/directions in the link. No affiliation on my part. They have honest-to-goodness butchers there and tend to stock, or can get, unusual items.

You could also try calling the Swift packing house down in Butchertown. The number of hogs they processed daily I'm sure they either process the lard or ship it someplace that does.

Jim Fiedler (Fiedler Family Farms) sells all natural lard and leaf lard. He is at the BRFM location Thursdays 4 - 6 pm. Email him today (tues) for pickup on Thursday... jfiedler@psci.net It keeps forever in the fridge...

I cook with it. The best fat in the world and quite healthy. (Check out Weston Price) I have ordered it by mail and that can be expensive. Nice to know there is a local source.

I'm pretty sure you can get it - lard, anyway, if not leaf lard - at Latino supermarkets; there's one in just about every corner of town nowadays. Ask for "manteca."

Also, I'm pretty sure Kroger carries lard, at least an industrial brand. It hasn't disappeared entirely from country-style baking.

The ones you find in the market are partially hydrogenated and filled with preservatives. You have to go for the good stuff, preferably organic.

Heading out early tomorrow to hunt- Thanks y'all. You are saving a very important holiday! Pi Day( March 14 or 3.14 :wink:) is a big deal in this house. Nerdiness. Pie. What else could you want? Except more pie, of course.

We use Tropical traditions non-hydrogenated organic palm shortening. We get it online, but if we ever run out we pick up spectrum brand of the same product (available at most krogers in the health food section for $6.19) I like tropical traditions better though.
