I loved Old Walnut Street Chili Parlor - they had several kinds of chili made with different meats. Sometimes I would just stop in for the tamales. Robin I think they moved from there to 4th and Oak, which is where they died... :(

I think this would be a great "throwdown" after the first of the year; just in time for NFL Playoffs.
We would have plenty of time to plan it.
I don't think I've ever made chili the same way twice...ever; and I've made a lot in my day.
I don't like to toot my own horn, but I do think I make a pretty mean White Chili.

Anyone else avoid using ground beef in their chili? Unless I'm making it for use on chili dogs for a cookout or something, I go with a big hunk of sirloin and cube it up real well. Not sure why, but I like it better that way.

Also a big fan of these when I make a pot:

You mean there are actually people who make it the same every time? It certainly takes all the fun out of making chili.

If it is white it is not chili! It may be good but it needs to find another name.

An interesting and helpful comment, actually. I have a couple of family members who prefer vegetarian meals when they are available, so that was just added to the list of options. Will have to try those to see how they work texture-wise with the rest of my ever changing recipe. Thanks.

Made chili last night after I got home from school. Was able to enjoy it for lunch today.

Ground turkey and beer* are the important ingredients in my chili.

*I've always used Cave Country Chili Beer in the past but had a hell of a time finding it this time around. Got tired of searching for it (The Keg did offer to order it in for me, so thanks to them for that), so I went with the Abita Restoration this time around. Glad I could buy just a single bottle from Old Town. Cooking with one and drinking the other five would have made it an expensive ingredient. Also didn't want to buy six that I wasn't sure I would like for cooking or drinking.

Now that I have eaten it, I like the Abita just fine, but I think I like the Chili Beer better.
Thinks the frosty mug is the low point in American history.

I made a version of white chili with 100% pulled chicken breast meat, fire roatsed fresh poblanos, fire roasted fresh jalapenos, fresh habaneros, and a little of this-and-that spices. NO BEANS.

My understanding of the basic definition of chili, is chili peppers and meat, everthing else is variations on this theme.

If this dish isn't chili, then what is it?

BTW, I served it with fresh made pico de gallo, tortilla chips, shredded monterey jack cheese, and sour cream. There were no complaints.

Of course it's Chili...of sorts...Dan and my comments to the contrary were merely to stir the old Chili pot.

Speaking of such variations wasn't there some "hot" new Chili place that opened last year that was serving up a variation of this "white" chili ? What ever happened to that place ? Is it still around ? Anyone ?

Speaking of Chili/Restaurants who in town puts up a good Chili ? I know Shady Lane serve up a pot (I think it's a regular board item)...anyone else well known for their "bowl of red" ?
