I just saw this post and I think it's a pretty cool idea. I think some restaurants fail because too many owners go right from a home kitchen to a restaurant with little idea how Mom's recipes will play out when multiplied by 50 servings and cooked in an industrialized atmosphere.
I dunno. This just seems like a good next step to me.
