Valencia, Spain Recommendations?

You all did such an amazing job on my request for San Francisco recommendations, that I'm back for more. This time it's a little more challenging (there is no such thing as a bad meal in San Francisco)- I'm going to Valencia, Spain on business. It's really not as much fun as it sounds as I will be working hard, but I will have a number of opportunities to entertain customers for dinner, and also to eat solo . Also, any suggestions on foods I'd want to bring back from Spain?( I already have Iberico ham and saffron on my list).

Anybody have any recommendations?

Yes, restaurant had been in the family since a zillion years and paella recipe was the same one they made for Julius Caesar or Napolean or whoever. Old anyway. Loads of tapas joints down around there. You really can't go wrong.
