Getting the shell off a hard boiled egg !!

Hi,

Any tips for this??

Seems like too fresh eggs cause a problem??

Anyhow, there MUST be a better way than pure luck which is often my pitiful approach..

I always make sure they are completely cooled first. Then I tap it on the counter just enough to crack the shell, roll the egg between my hands until shell is cracked all over, and slide it off the egg. I never have any problems peeling hard boiled eggs this way. In fact, I actually made a tray of deviled eggs this morning for a get together.

Pretty much what I do with 2 additions:

Salt the water.
Peel the shell under running water.

I think the problem is the egg is too fresh. We raise our own birds and find that the eggs that are from one day to a week old are the hardest to peel. We plan ahead by keeping a spare dozen in the fridge for an extra week or so. The reason behind it is the liquid inside has evaporated in an older egg allowing a air space to develope that helps separate the membrane from the shell. Most eggs at the major grocery chains are at least a month old by the time they hit the shelves.(cant back up the last statement with fact, but I am friends with a guy that delivers them to stores who tells me such.)
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.
