No sandwiches or turkey salad here (although I love both). Post your most unique Thanksgiving leftover recipes:

I'm going to make this: Rustic Turkey Tart, which calls for dried cranberries, but I'm just going to substitute some leftover cooked cranberry sauce in place of those.

We had two Thanksgiving dinners yesterday, both out of the house, so there are no leftovers around here.

One of my usual favorites, though, is a sliced turkey sandwich dressed with dressing and cranberry sauce, on very good quality white toast.

We have very little turkey left over. The fried turkey was a huge success. My parents have most of a 13 lb turkey left. I know what we'll be having for dinner on Sunday. :?

Turkey mole and turkey enchiladas.

Mom would make an red enchilada casserole. She'd fry up corn tortillas, dip them in red sauce and put them in a baking dish then layer the tortillas with cubed turkey, green chilis, onion, tomatoes, and colby-jack cheese.

I guess that's what I will be making this evening.

The chilis cover up the game taste of the turkey nicely.

I am making it now and the kitchen smells devine. Like chili, I believe that gumbo is better the second day, so we will be having it tomorrow. I will report on it.... :)

I'll post my recipe tonight after I get home from work. I got it years ago out of Southern Living and tweaked it a bit.

Our bird's about gone, though thanks to low prices there are two more in the freezer - suffice it to say, we love turkey!

My favorite leftover meal is turkey soup. Barbara cooks the bejesus out of the carcass until it's richer than rich, then throws in the holy trinity and some chunks of turkey meat and cooks it for a while more. Add some no-knead bread on the side and you have a perfect meal. Sometimes the simple things are the best.

Had the gumbo last night - it was good. Not the best i have ever made, but very nice. I did halve the recipe ans still got over 2 quarts of gumbo. I will try to post pictures later today!
