Nicoise Olives

by Ray Griffith » Sat Oct 10, 2020 9:08 pm

I have a surplus of nicoise olives because I made tuna niçoise salad tonight. I already Googled and the hits don’t interest me. I suppose that I could make a tapenade to spread on some Blue Dog. However, I want to use them for an entree. Does anyone have a suggestion for something else I could make?

Pasta puttanesca? Or maybe something like this Pasta Nicoise from the BBC, but maybe hold back on most of the anchovies but use a lot more olives?

Thanks, Robin....sounds like a good idea.

Also, my wife would appreciate you saying to back off on the anchovies because I love and am often heavy handed with that wonderful bacon of the sea!
