Instant pot stuff

by Nora Boyle » Thu Sep 15, 2016 10:52 pm

I'm not a total convert, but my mom got me one and I've been playing with it. Most recently I have been keeping a gallon freezer bag with the ends of chopped up veggies and leftover bones. I just dumped them all into the pot and set it on 30 mins high pressure. But after I set the timer I actually read about adding delicious things like ginger chunks or pepper corns. Mine has celery hunks, corn cobs from the grill, chicken thigh bones (raw) and carrot and broccoli ends. Hopefully it will all be tasty in the end, if severely underseasoned.

Is an Instant Pot basically an electric pressure cooker? I use mine for stock...it does great in about 1/2 hour.

I usually throw in some peppercorns for cooking and add salt later. The only caveat is that the stock ingredients can't stay in the soup; they give up all flavor to the stock.
