Vegan recipes for Thanksgiving?

by Deb Hall » Sat Nov 15, 2014 9:55 am

My parents are now following a plant-based diet ( no meat or dairy, cheese) and we are having our first family holiday since they started. We'll be serving our normal turkey, etc but I'm looking for some truly outstanding vegetarian/vegan recipes to augment their choices so they don't feel left out. ( Note: A very small amount of non- plant sourced ingredients is acceptable- they are doing it for health not ethical reasons. )

I'm hoping for some outstanding suggestions from this group. :D
Thanks!

Deb, I saw a blog post on this just the other day. I'll try to re-find it and post a link.

Thanks, Robin! I've found a few possibilities this morning, but would love to have more.

Sorry to be slow, Deb. This wrapup looks like it might serve you well, though:

Food 52 wrote:13 Dishes for Feeding Vegetarians on Thanksgiving

At its best, Thanksgiving's bounty inspires gratitude; at its worst, vegetarian angst. Non-meat eaters, when faced with a table that could be confused with a turkey temple, often fixate on the meat. They scratch their heads and wonder, "What's in it for me?"

The answer: A lot. A whole lot. Vegetarians can eat creamy vegetables, mashed potatoes, stuffing, and a vegetarian gravy that's just as good -- even better -- than any made with meat or chicken stock.

Even without the turkey, vegetarians have a lot to be thankful for.

If anyone is looking in the future, I made this vegan stuffing ( with EarthBalance spread and sourdough bread):

It was truly outstanding! My sister made our traditional stuffing and everyone declared mine the new favorite. I will be making meals around preparing this stuffing again- definitely not waiting for another Thanksgiving. :D
