Vegan recipes for Thanksgiving?

My parents are now following a plant-based diet ( no meat or dairy, cheese) and we are having our first family holiday since they started. We'll be serving our normal turkey, etc but I'm looking for some truly outstanding vegetarian/vegan recipes to augment their choices so they don't feel left out. ( Note: A very small amount of non- plant sourced ingredients is acceptable- they are doing it for health not ethical reasons. )

I'm hoping for some outstanding suggestions from this group. :D

If anyone is looking in the future, I made this vegan stuffing ( with EarthBalance spread and sourdough bread):

It was truly outstanding! My sister made our traditional stuffing and everyone declared mine the new favorite. I will be making meals around preparing this stuffing again- definitely not waiting for another Thanksgiving. :D
