Dehydrated Ratatouille Recipe Help

Don't have one. Any suggestions appreciated. Thought occured to wife while eating a sun dried tomato, capers and olive oil dressing. We have dehydrated eggplants, peppers and tomatoes from last years garden. We have a dehydrator, can dehydrate onion and zucchini. My thought is the ingredents in oil. No ideas after that.

Perhaps add some basil and oregano. Fresh would be better if you've got it.

Wow...I think grinding those things up in a coffee grinder and using them as a seasoning or rub or perhaps as a additive to a vinaigrette would taste awesome...

Thanks. for the positive response. The meal will be for those who helped raise the vegies sold that support an orphage in Kenya. The vegies were the imperfect that we stored and will be used in the dish.
