(almost) No Carb Mashed potatoes

We made these tonight and really liked them. I used very high quality Rancho Gordo beans, and added a very small amount more cheese, but otherwise used the recipe as is. Guilt- free goodness!

I agreed with Robin that this recipe sounds great. Presently, I often mash my cooked cauliflower.
However,I am really confused! I don't understand how this recipe can have zero carbs. Every can on cannellini beans in my pantry lists betweenb 18 and 23 carbs per serving (not per can) and a half head of medium cauliflower has 8 grams of carbs.

Deb, I know the you titled your post (almost) No Carb Mashed potatoes, but the paragraph under the picture in your link said "This is one of the few occasions where ‘fake’ tastes better than the real thing- especially since this recipe has ZERO carbs." That it appeared on a Marcus Samuelson website, whom I hold in high esteem, is disturbing.

It still sounds like a good recipe!

You can deduct the fiber from the carbs, cannellini beans have almost half as much fiber vs carbs.

Yes, the fiber offsets the carbs, so the body only stores the carbs over the fiber. I was low carb for years and try to keep lower carb now.
