How to use Rhubarb?

I have suddenly gotten into my mind that I want to try making something with rhubarb. Don't have a clue where to find it or how to use it, but I am trainable...

One of my favorites. It's super duper easy! I like to add some fresh peaches to this and serve it over grilled chicken or pork when they start coming in in a few weeks :wink:

Rhubarb Chutney
Ingredients:

3 Cups Rhubarb -- sliced
1 Cup Cider vinegar
1 Cup Sugar, brown -- dark
1/2 Teaspoon Ginger -- ground
1/2 Teaspoon Allspice
1/2 Teaspoon Mustard -- dry
1/2 Teaspoon Cinnamon
1/4 Teaspoon Garlic powder
8 ounces Dates -- chopped
1/2 cup Raisins
2 medium Apples -- peeled & chopped, 3 cups)
Procedure:

In 2 quart glass bowl combine rhubarb, vinegar, brown sugar, ginger, allspice, mustard, and microwave on high for 6 minutes or until boiling. Add dates, raisins, and apples. Do not cover. Microwave on high 6 minutes. Stir and microwave 6 more minutes. Stirring occasionally, let stand till barely warm. Spoon into jars and refrigerate. Will thicken.

This is a good quick sweet
Strawberry-Rubarb Preserves

5 c. rubarb chopped
3 c. sugar
Let set, sugar will disolve. Boil 15 minutes, stir often. Remove from the heat. Add
1 3 oz. box of Strawberry Jello.
Mix well. Seal in 4 hot 1/2 pint jars.

Maybe Ms. Gayle or Stephen will get on here and tell us how they made that beautiful rhubarb vodka. It was fantastic and was the most delicate hint of pink in color. Or was it an aquavit? Whatever. Served chilled and up it was heavenly.

Grandmother Haley's Rubarb Pie (from Stutsman County (ND) Homemakers Centennial Cookboook, 1883-1893)

3 1/2 C. rhubarb, cut in 1/4 to 1/2-inch pieces
6 Tbsp. flour
1/8 tsp. salt
1/4 tsp. nutmeg
1 1/2 c. ugar
3 egg yolks

Blend all ingredients well. Pour into an unbaked 9-inch pie shell. Bake at 400 for 40 minutes.

Meringue:
3 egg whites
4 Tbsp. sugar

Beat the egg whites stiff; add sugar slowly. Put on pie and bake at 300 for 15 minutes.



Rhubarb Nut Bread (from North Dakota Where Food is Love by Marcella Richman, 1995)

1 1/2 c. brown sugar
1 egg
2/3 c. oil
1 c. buttermilk
1 tsp. vanilla
1 tsp. salt
1 tsp. baking soda
2 1/2 c. flour
1/2 c. nuts
1 1.2 c. diced rhubarb

Mix and put into 2 greased loaf pans (2/3 full). Top with mixture of 1/2 cup brown sugar and 1 tablespoon butter. Bake at 350 approximately 1 hour. Test with toothpick When done, cool in pans.



Rhubarb Crisp (from Kitchen Magic by Charlotte Hansen, 1963)

1 c. cake flour
1/2 c. butter
5 tbsp. powdered sugar

Mix the above ingredients togeth and bake at 350 for 15 minutes. Pour the folling over the baked "crisp."
2 eggs, beaten
1 1/2 cups sugar
1/3 cup flour
2 cups rhubarb (cut up)
3/4 tsp. baking powder
1/2 tsp. salt
3/4 c. walnuts

Bake 30 minutes longer.

These are recipes which I remember growing up. There are many versions of both one and two crust rhubarb pie often with sour cream or strawberries. I also fondly remember my mother making a rhubarb "sauce"/chutney to serve with pork and/or lamb.

I'm sorry but I am unable to find my Marcus Sammuelssen cookbook that Stephen used as a basis for the Rhubarb Aquavit.

BUT today I found a Rhubarb-Strawberry Pie Ice Cream at Fresh Market that was absolutely delish!

One of my former students just sent me this recipe she had tried. She said it made her think of me!
