Cake

Can an un-iced cake be successfully frozen? Well...I know you can freeze it but will it taste OK after it's thawed? Assuming it tasted OK before it was thawed.

It most certainly can, However you don't want to leave it in the freezer for more than a couple of months.
I like to wrap it in parchment paper and double wrap with plastic to keep out moisture from the freezer that may impart funny flavors wafting over from your fridge.

I worked at The Cheddar Box over 10 years ago and they used to freeze their cakes, already iced. I don't know if they still do it, but I do know they had been doing it for sometime when I was there.

I freeze cakes all the time, wrapping them in layers of plastic and foil. Thaw them in the refrigerator.

Also, a lot of the professional pastry folks over at egullet suggest freezing a cake before you ice it, making it easier to ice (no crumbs scraped up and into the frosting).
