I found this recipe on the weight watchers website and wanted to share it. It is so simple and really tasty. I modified it a bit - the recipe posted has my modifications. I think you could do whatever you wanted to it though. Next time I make it, I'm going to add some spinach. Enjoy!
Moroccan Chickpea Chili
2 tsp olive oil
1 chopped onion
3 stalks chopped celery
2 medium chopped carrot
3 cloves minced garlic
3 tsp ground cumin
2 tsp paprika
1 tsp ground ginger
½ tsp ground turmeric
¼ tsp freshly ground black pepper
¼ tsp salt
¼ tsp ground cinnamon
¼ tsp ground red pepper (or more or less to taste)
2 cans fat free, low sodium chicken broth
3 tbsps tomato paste
2 (15 ½ oz) cans chickpeas, rinsed and drained
1 (14 ½ oz) can no salt added diced tomatoes, undrained
2 tbsps chopped fresh cilantro
1 tbsp fresh lemon juice
