Seitan

by Charles W. » Thu Mar 01, 2012 9:54 pm

Looking for protein sources for our newly vegetarian (and picky eater daughter--not a great combination). I've had the seitan at Roots and really like it--I like the fact that it isn't faux meat looking.

I tried some from Kroger and hated the look/texture. It looks like bad stewed meat.

Are there sources for seitan that doesn't look like faux stew meat?

Feeling your pain dude...My oldest daughter went through a vegan/vegetarian stage when she was a teenager. Fortunately she is now a fully recovered functioning omnivore. I attribute this to the miracle of bacon. I will keep your family in my prayers.

There have been earlier threads on this forum (search for them!) that go over how to cook setian from scratch. It's not hard, tho it can be time-consuming, and it makes a LOT of the stuff so you don't have to do it often.

I agree - the texture is not awesome. I put some in the food processor and ground it up, so it became like ground beef. Then I used it in a chili with beans. Not bad. But you've inspired me - I'm going to source my next package of seitan from Rainbow Blossom.

This is a good recipe:

The chick pea family of foods (hummus, falafel, etc) is also a good source of protein.

Tempeh too...
