Cheddar Box Caramel Cake recipe

by Danielle D » Fri Oct 19, 2007 8:18 pm

Does anyone happen to have the Cheddar Box's recipe for their delicious caramel cake? I know the Courier prints signature recipes from different restaurants from time to time and I searched and couldn't find it. It tastes like it has cornmeal in the cake part and the icing is like no other caramel icing I've had/made.

Cheddar Box's Caramel Cake Recipe

by Linda B » Thu Nov 29, 2007 11:13 pm

After searching through my recipe file I found this from the CJ:

Cheddar Box Caramel Cake

Cake:
3 cups flour
1 tablespoon baking powder
1/2 tsp salt
1/2 pound butter
2 cups sugar
5 eggs
1 1/2 cups heavy cream
2 tablespoons vanilla

Icing:
1 stick butter
1 cup brown sugar
4 tablespoons cream
3 2/3 cups powdered sugar
1/2 pound cream cheese
2 teaspoons vanilla

Cake:
Combine flour, baking powder and salt.

Cream butter. Slowly add sugar, 1/4 cup at a time and, when well mixed, add eggs 1 at a time. Then add dry ingredients alternately with cream and vanilla, beginning and ending with flour.
Bake in 2 greased and floured 9 inch pans at 350 degrees for 35 minutes.

Icing:
Melt butter and add brown sugar. Boil 1 minute. Add cream and boil another minute. Remove from heat. Add powdered sugar and beat in cream cheese and vanilla.

....and I'm sure the lovely folks at the Cheddar Box have been kind enough to remove all the fat and calories! ;)
