Turkey Gravy

I have never made turkey gravy but may need to this year. Does anyone have a good recipe or know of a "ready-to-wear" one that is good? Since I brine my turkey I am always leery that the drippings will be too salty to make a gravy. Any advice is welcome!!!

Carol,
I use a recipe from Woman's Day that's a make ahead recipe so it doesn't use use the brined drippings.

I adapt it by buying turkey parts to make the broth ahead ( my turkey isn't typically thawed by then). I don't chop the meat after making the broth- I throw it out or put it in soup. To finish I use good chicken stock in lieu of most of the turkey driippings, adding a small amount from the turkey pan ( and minimizing salt use throughout the recipe.)

I really like this recipe and the do-ahead process ( I must like it, I've been using it for more than 10 years. :wink: :D

Like you, I tried Deb's link and found ti to be non-working.

While Googling I also noticed the Southern Living had a make-ahead turkey gravy rceipe:

Not that I have tried it, but I have noticed that Fresh Market is carrying a 2-cup box of organic , gluten free roasted turkey gravy.

Ladies,

Here's the link again: ( maybe I mistyped last time- this works fine for me, just tried it again. )

I neglected to mention that I add a small amount of Kitchen Bouquet to the finished gravy to give it extra deep color. (Found in the bakking section with spices/ just add in 1/2 tsps till it's the color you like). Not necessary at all- I happen to have it on hand.

Gayle- while the one you posted sounds good, I really like the technique for the one I posted. You mash the butter with the flour, then whisk this into the gravy to thicken. I find this completely eliminates lumps ( and the stress that goes with them).

I brine mine, and never have an issue with the drippings. If the drippings are THAT salty, your brine needs to be adjusted.

Seriously- I use an inexpensive Chardonnay as I always have it around the house. Use something you like to drink too- that both makes the food taste better and makes the cook happy. :D

Drinking. After having to transport the whole dinner to my in-laws, serve it and clean up, I may just put an extra long straw in the bottle...
