Polenta with goat cheese and garlic-sautéed spinach and chard, inspired by the goat cheese polenta at Decca.

Robin,
How'd it come out? Do you think it'd work with fresh garden kale? I've been looking for a new way to use mine.
( and do you have approximate quantities used  )

Deb, it came out fine. Flavors about the same - I'm sure Decca uses Capriole. Mary said my texture was more authentic (Italian), not knocking on Decca, whose dish is wonderful, but she thought theirs had more the texture of cheese grits. Kale should work fine. I'm sure any greens suitable for sauteeing with garlic until wilted would work great.

Lessee ... reconstructing, probably 2/3 cup yellow corn meal to 3 1/2 cups water; salt and freshly ground pepper, of course; a bit of grated Parmigiano-Reggiano and butter stirred in at the end, then dabs of Capriole and the sauteed greens on top.

As you may know, Decca doesn't add the greens. Their dish isn't really veg-garnished other than a few pretty celery leaves on top.

Too tired to cook tonight : ChefBoyardee Ravioli from the can, Wonder Bread and canned green beans.

With Twinkies for dessert ( if I can buy some on eBay).

Season's greetings! I think we're going to eat Vienna sausages out of the can and drink Lite beer while watching Nascar.

Tested out a couple of new rub/sauce recipes on a two racks of St. Louie's last night. Probably the best -tasting- ribs I've ever done...ever.

I'm not much for duck eggs but I do admire your choice of beer...drinking a Hoptimum myself at this very moment...prolly one of the best "hop bombs" on the market.
