Grilled salmon tacos with grilled cebollitas and three pickle slaw (my mom's kimchee, my own pickled daikon & sour power pickled carrots).

A simple version of Lobio, a Georgian dish of green beans, onions and garlic tossed with scrambled eggs with chopped walnut and dill and fiery hot peppers.

Underneath that everything-in-my-fridge-door relish (wickles spicy dills, the end of my mom's kimchi, some sour power sauerkraut, wild carrot farms pepper butter and an entire caramelized onion) lies a comfortably nestled grilled hot dog.

Interesting. I did Jerk Chicken tonight as well...A Jerk Chicken-Pasta-Cream Sauce kinda thing (it tasted a LOT better than it sounds). I used Grace (brand) Jerk Seasoning for the first time tonight and would NOT recommend this particular brand to anyone. It is WAY to salty.

Now THAT's what I'm talking about...Italian Beef w/ homemade giardiniere. "Paired" :roll: with a nice Goose Island IPA and The NASCAR Bud Shootout. Can I hear ya say "Hell yeah".

Early Mardi Gras this past Friday. A riff on Natchitoches Meat pie with cilantro crema, raw and grilled cron maques choux, and green tomato sauce garnish. Deconstructed gumbo with "sea foam", crab risotto cake, andouille and crawdads.
