You need something with a little more guts than a regular ole chicken egg to stand up to that beer. It's almost syrupy.

Moo goo tofu pan? A plant-based spin on the classic Cantonese-American chicken-and-mushroom stir-fry, using smoky grilled sesame tofu from the Whole Foods salad bar in place of chicken. Tastes like ch ... Um, let's just say it tastes great,

Rabbit for Easter supper. With pureed carrots, pureed parsnips & cauliflower with vanilla, crispy garlic and sage and a salad of green apple, zucchini, asparagus & pickled bleeding heart radish.

Enjoyed with Brasserie Dupont Avril and Domaine Chaume-Arnaud Vinsobres 2007.

Iranian eggplant khoresh. Very nice with basmati rice and a cheap-and-fruity Parker Station California Pinot from California Wine Club and Persian music on Pandora. ...

Polish sausage two ways...w/grilled onions and yellow mustard and Chicago "garden" style. Sausage imported from my favorite butcher/sausage maker on Cicero ave in Chicago.

John- Which shop is your favorite? I used to go to Stanley's on Belmont a fair bit, mostly because it was super close to my house. But then I found a place on Milwaukee north of Diversey I started frequenting because they had a big tub of pork bones at the end of the butcher counter, which you could just grab as many as you wanted for free, provided you got there before all the old Polish ladies. That sausage looks fresh too, not smoked. My buddy Rick used to braise that kind of Polish for parties all the time, one of my favorite ways to enjoy it.

I used to love the Gilmart that was also on Archer but they closed somewhat recently.
And yes this was braised in beer prior to being browned up.

The only spot I've been to out that way is Bobak's. I love their pickles. . . their sausage, it's fine, but you know, you can pretty much get it anywhere up there. I have a friend who lives in Berwyn who commutes sw to work out Archer, the next time I am visiting (I often stay at his place), we'll check out Joe & Frank's.

A riff off of one of my favorite dishes from one of my favorite restaurants: Urban Belly (in Chicago). I sous vided some excellent Barr farms short ribs, then grilled them with a kalbi mop, served alongside kimchi puree, scallion rice, quick pickled radishes & carrots and some grilled broccoli.

I'm so honored to see your posts in this forum, thank you for continuing to share with us the things you're capable of that most of us are not. What you show us: is it always straight out of your kitchen for your own loved ones? Just a love of cooking and sharing? I'm so enamored!
