I made this on Monday, and it was excellent. Letting everything sit overnight before finishing the next evening made all the difference (as fas as I could tell). The rub is quite good as well.

Kathy and Brad,

Sounds great, but any suggestions on what to do with the leftovers? That's a lot of meat and I've kind of given up on PotRoast as the leftovers tend to sit in my frig ( unlike other leftovers).

I cut everyting back just a bit and went with about a 3 pound roast. Being that the cooking method is braising of a relatively fatty cut of meat, you'll lose some of the weight during the cooking as the fat melts out.

It ended up being enough for around 4 meals, and everything froze just fine. After thawing, just reheat by simmering the meat in the sauce for 10 or 15 minutes.

I make a similar pot roast and I make a papparadelle with the leftovers. I had a dish at Johnny Carino's that used shredded pot roast, tomatoes, red wine and a heavy cream sauce. Just add in a drained can of fire roasted diced tomatoes, 1/2 c wine, 1 c cream and bring to boil. Add in the pot roast (and veggies if you like) and serve over papparadelle noodles or wide egg noodles. Season up with some garlic, basil, salt, pepper to taste.
