I want to cure some pancetta and am having no luck finding pork belly around town. Boone's market in Bardstown has it, but that's a drive. You can buy it by the case from butchers here, but I don't need 60 - 80 pounds of pig fat lying around. I'd eat it. Any suggestions? Thanks.
Is that a raw fish in your pocket or are you just glad sashimi?

Sorry - I know it's a chain - but I also have friends who work in the meat department. Maybe call Whole Foods?

I get mine at Kingsley's on Taylorsville. They sell it by the piece.

You might have some luck with Grasshoppers.

I'm not sure if they deal at all in retail, but they may be able to help, or point you into the direction of a farmer or CSA that can.

Speak with the chef at your favorite restaurant. Many times you can piggy-back on thier orders. They may even offer a special to thier guests, discounting your price even further by buying in bulk.

But you didn't hear that from me!

I've bought it before at the Asian market in the corner of Preston and Gilmore Lane, out front of Koreana II. You might check other Asian markets around town as well.

Whole Foods has it as does an Asian grocery on Lyndon Lane at La Grange Road.

Viet Hoa market on Preston Hwy. (south of Fern Valley, and in Louisville terms 'where the Target used to be') usually has it in their meat case in the rear of the store as well.

You can get it at Vietnam Oriental Market - 5019 sth 3rd street

I was in there last week and they had plenty, and cheap too. it's my new favorite grocery store!
