Hoping maybe Ethan or Ryan or some pro working in a modern/elevated/finer context might see this.
Recently watched a great documentary on Pascal Barbot. He uses a nice circular plating mold for a dish, looks like a large, shallow pastry cutter. I have been using my biscuit cutters for molds for a while, went to Dine today to see if they had anything interesting or possibly useful, but all the had was some more circular pastry cutters. Any ideas for where to find interesting plating molds out there, even mail order on the internet? Obviously googling "plating molds" no matter how many other restaurant terms I add to the string comes up with all kinds of sheet metal and casting products, not what I'm looking for.
Also, a restaurant I used to frequent in Chicago used to serve their rice in pyramids, as if they had a scoop kind of like an ice cream scoop, but pyramid shaped. Any ideas for interesting plating approaches like that, and tools to do it with?
