Plating Molds

by Ken B » Thu Aug 18, 2011 1:16 pm

Hoping maybe Ethan or Ryan or some pro working in a modern/elevated/finer context might see this.

Recently watched a great documentary on Pascal Barbot. He uses a nice circular plating mold for a dish, looks like a large, shallow pastry cutter. I have been using my biscuit cutters for molds for a while, went to Dine today to see if they had anything interesting or possibly useful, but all the had was some more circular pastry cutters. Any ideas for where to find interesting plating molds out there, even mail order on the internet? Obviously googling "plating molds" no matter how many other restaurant terms I add to the string comes up with all kinds of sheet metal and casting products, not what I'm looking for.

Also, a restaurant I used to frequent in Chicago used to serve their rice in pyramids, as if they had a scoop kind of like an ice cream scoop, but pyramid shaped. Any ideas for interesting plating approaches like that, and tools to do it with?

Thanks!

Ken,

Tried a different google string and found these. While not exactly what you asked for, I thought thismight yield some good leads for sources.

PS. I googled "Restaurant Plating Tools" which had a lot of good matches.

when plating rice, you can acheive just about any shape that you have a vessel to pack the rice into. all you have to do is dip said vessel into water, shake out the excess H2O, pack rice firmly (but dont smash), place plate over said vessel, and flip rice and plate simultaneously. the desied effect will be perfect almost every time

I use a lot of ateco's ring molds which can be found here:
https://www.atecousa.net/Merchant2/merc ... Code=csets

They won't create 3d shapes, but they have multiple 2d shapes

For something 3d like a pyramid you're going to want to use a 3d mold;

They have lots of mold options to play around with

What Ryan said.

JB Prince or Chef Rubber both carry a ton of options available for retail sale.

Silicone molds are especially nice for molded/set applications, but a sheet pan size of any of them runs generally $80-150.

Pyramid plating molds have been used for awhile now, but are tricky to find. Heres a good website to check into:

Hope this helps!
