cattail soup

My husband was cleaning out the waterfall in our pond today and he had a fresh cutting of a cattail. He handed it to me and said "cattail soup?" I thought he was joking. I've never, ever heard of this.
Of course...I hail from the desert in far....far...west Texas. He is from the UP of Michigan.

I'm confused on how this is edible...any insight would be greatly appreciated.

Hope all is well with everyone. I've been missing from the boards because I'm back to work on a temp assignment.
