Who's got a great potato salad recipe????

I need to make some tater salad next weekend for a party and was wondering if anyone has a great recipe. I lean towards the non german style, more a creamy bacon american style. Thanks in advance....

Costco. Either the Reisers or the Country Maid Bacon and Bleu (my preference) are most excellent. Both of them beat almost any "homemade" Tater Salad I've ever had.

A friend makes something like this for cookouts - I would think adding bacon and/or egg would just make it that much better. She keeps it cold over a bowl of ice to keep the avocados green.

An old ex-girlfriends mother used to make the best potato salad. I asked her for the recipe. She said look on the back of the Hellmans jar.

The deli's in NYC area had this potato salad that was thin sliced and i absolutely loved it. Mayo, potatoes, and nothing else you could see.

Here's as close to a recipe that I have....

5# potatoes (peeled and cut into 1/2 inch chunks) or use New Red potatoes and you don't have to peel them. :D
3 stalks of diced celery(about 1 cup)
1/3 cup diced red onion
1/2 cup diced red pepper
1/3 cup sliced scallions
1# bacon cooked and rough chopped
2 T dry ranch mix(about 1/2 a package)
1/3 cup(about 1/2 jar) Durkee's Sauce
1/3 cup whole grain mustard of your choice(I like Woebler's hot and sweet)
6 grated hard boiled eggs
Mayonnaise(I just eyeball this...maybe 2 cups or so)

In large pot bring potatoes to boil until al dente'. when the potatoes are almost done add the peppers, celery, and red onions to the pot and cook for about a minute. drain and rinse. Put in large bowl and cool in fridge for about an hour. When chilled add all remaining ingredients reserving a little bacon and scallions and mix well and season with salt and pepper. Garnish with remaining bacon and scallions and paprika or my new favorite seasoning Bacon Salt and enjoy!

Here's mine - makes a pretty big batch. This is the "home version" I cut down from the even bigger batch I used to make at Lou Lou, so please know that I never made a batch this small:

5# quartered red potatoes
8 ounces champagne vinegar
4 tablespoons of dried dill, halved (sprinkle part on cooling potatoes and put other half in the dressing)
6 boiled eggs, finely chopped
16 ounces quality bacon, diced and broiled until crisp, well-drained
2 cups chopped red onions
1.25 cups diced celery
1.25 cups quality mayo (I prefer Duke’s!)
1 cup sour cream
2/3 cup dill pickle relish
½ cup creole mustard (Zatarain’s!)
3 tablespoons celery seed (not celery salt!)
1 teaspoons cayenne pepper
1 tablespoon lemon juice
1/4 cup granulated sugar
3 tablespoons ground black pepper
3 tablespoons kosher salt

Boil potatoes; spread hot potatoes on a sheet pan, sprinkle liberally with the champagne vinegar, salt, pepper and about half of the dill. Chill in fridge or the garage until completely cool.

Combine all the remaining ingredients and pour over potatoes in a large bowl - be sure to include the vinegar that remains on the sheet pan in the total salad mix. Obviously, this tastes better the next day after the flavors have a chance to marry up.

made some for a little cookout over the holiday weekend and it went over well.

-cook up some bacon bits, set aside
-finely dice 1 large red onion, set aside
-cube 5 pretty big Idaho potatoes, and blanch them (skin-on) in mix of residual bacon fat and olive oil
- season the spuds with smoked paprika, garlic powder, fresh black pepper, oregano, and cumin
-spread flat on 2 greased cookie sheets and roast at 400 (turning occasionally) until browned with crispy skins
-remove from oven and salt IMMEDIATELY to taste.
-let stand to cool until still slightly warm
- fold spuds into a large mixing bowl with evoo, less mayo than you think, dijon mustard, reserved onion and bacon, couple splashes of white balsamic vinegar, few drops of sriracha, drizzle of truffle oil, pinch of sugar, salt and pepper to finish

i realize that this is NOT a recipe
but it was some damn good potato salad
