Fiery Cajun Dish, recipe sought.

by Mark H. » Mon Sep 10, 2007 4:46 pm

I love the Voodoo Chicken from our local gumbo franchises, but none are near my neighborhood. I have looked for recipes on the net and found a Burt Wolf recipe called "Voodoo Gumbo". It looks close and I will make it soon. Has anyone experimented with this type of recipe? I can make a pretty good roux and like my food extremely hot. Any suggestions or comments welcome. Here is a link, I hope, to the Voodoo Gumbo recipe.

If you can make a roux any gumbo or jambalaya recipe is a snap. BTW if it is heat you want, we carry ground habanero pepper. This stuff will take the metal off a '36 DeSoto. Good luck, the recipe does sound good.

Thanks, Paul. I've been meaning to stop by and replenish my spice stock. We'll talk about the habanero powder later...
