I love the Voodoo Chicken from our local gumbo franchises, but none are near my neighborhood. I have looked for recipes on the net and found a Burt Wolf recipe called "Voodoo Gumbo". It looks close and I will make it soon. Has anyone experimented with this type of recipe? I can make a pretty good roux and like my food extremely hot. Any suggestions or comments welcome.
