wow.... what a tender piece of meat! i found some on sale the other day and bought a few. put them under the broiler for about 8 minutes a side. really, really nice and tender. my husband did comment that they do not have a very beefy flavor, but i am liking them for the tenderness.

We like this cut as well.

If you buy these at Kroger the package has a "Southwestern Rub" recipe that is pretty stinkin' good.

One of the "new" cuts of meat that are being developed as an "economical alternative" to traditional steak cuts from the loin primals. It's not a bad piece of meat at all with proper cooking and slicing technique and can benefit immensely from an aggressive rub or marinade.

I think it is interesting that they "discovered" this cut at U of Florida and Nebraska, but I remember serving them at a restaurant in California, about 10 yrs ago! We were marinating them in a basic "brine" with some spices. It is a good cut and I always knew it as a blade steak as they said in Dan's link.

I do them with lime, cumin, and garlic. Grill. Cut on the bias and make tacos. Yummy!
