If you're in a hurry, then buy one of those motorized Chef Master sharpening machines.
Having Mr. Hiemerdinger (Who I think still works one day a week) sharpen, hone and polish your blades is well worth the time, effort and expense.
I have mine done annually because; I can use a steel and a stone to sharpen my work tools but, I like to get them done at Hiemerdinger's because they hone and polish my knives and I don't know how to do it like they do.
It's also really cool to open your knives in the newspaper that they wrap them in to preserve that shine and polish! It's like Christmas to a chef!
