squid and clams suggestions

by John Hagan » Wed Mar 23, 2011 9:07 am

Cleaning out the cupboard and have come across a few items that need to be used up. I have a 10 oz can(yes can) of baby clams,a 15 oz can of squid in ink,a 5 oz tin of California sardines and a small tin of anchovies fillets. My first thought for this lot would be to make some some kind of marinara sauce, but would appreciate any other suggestions for what to do with these.
Thanks
The tall one wants white toast, dry, with nothin' on it.
And the short one wants four whole fried chickens, and a Coke.

I'm thinking Spanish tapa bar time - four different bites rather than one big recipe.

The baby clams should be great on their own, or for something different, serve with a garlic salsa.

Squids in their own ink can be stuffed with tomato and onion and then become delightful with salad, as simple tapas or served with fresh crusty bread.

The anchovies are ideal for dressing over salads or simply on their own with bread and a drizzle of extra virgin olive oil.

California sardines:
1. They'd be great on a pizza base: tomatoes on the bottom, sprinkle chopped sardines next, then mushrooms, more tomatoes, cheese and peppers

2. Sardine Stuffed tomatoes - with lemon zest, chopped red chilli and olive oil

Thanks guys,
I like the stuffed squid idea I hadn't thought about that. Also you cant go wrong with linguine with clams, I just wasnt sure about using canned ones. Im probably going to try both of these this week. Ill let you know how it turns out.
Any other ideas?

Here's an article I wrote a while back about my recipe (basically, from Marcella Hazan) for white clam sauce, with no tomatoes, the way you'll find it just about everywhere in Italy north of Naples. I mentioned in the article that it really works as well with canned clams as in-the-shell, and it's a lot less effort that way.

If you still have the anchovies you could make some Bagna Cauda. It's really easy and pretty yummy(If you like anchovies) :D

3/4 cup olive oil
6 tablespoons (3/4 stick) unsalted butter, room temperature
12 anchovy fillets
6 large garlic cloves, chopped
Assorted fresh vegetables, cut into bite-size pieces
1 loaf crusty bread, cut into sections

Blend oil, butter, anchovies and garlic in processor until smooth. Transfer oil mixture to heavy medium saucepan. Cook over low heat 15 minutes, stirring, occasionally. (Sauce will separate.) Season with salt and pepper. Serve HOT with the veggies and bread for dipping and enjoy!

A fun menu with those ingredients:

Dirty Martini Variation with the squid ink

Anchovie-enhanced Bruschetta (tomato, shallot, anchovy, cucumber, parsley, lemon juice S +P)

Clam/ Ricotta Salata Stuffed Agnolotti (fresh pasta half moons, buerre blanc, herbs of choice)

Mandarin Orange Candied Sardines (hard crack, sweet and savory) Black pepper-Lemon Yoghurt

Hope you have fun with it!
