Beef Jerky!

I made my first batch of beef jerky last night. I made a simple marinade with lemongrass, thai chiles, soy sauce, fish sauce, and brown sugar. It marinated for a good 24 hours or so. I put it in my Nesco food dehydrator and checked on it every so often. It turned out pretty decent!

Is there an experienced jerkysmith out there that can maybe give me some pointers? I was pretty much just winging it with help from the dehydrator manual.
